During the COVID19 pandemic and everyone is in locked down mode, I am no different. While scrolling through the Dan & Russ co.'s Instagram account (danrussco) last week, I saw many Dalgona coffee posts from different influencers. It's absolutely beautiful and they really caught my eyes! The colourful foamy top is almost like a reverse latte.
After some research, I found out that Dalgona Coffee has actually been popular for quite a while in South Korea. It is further popularized on social media during this pandemic. All you need is to whip up equal parts of instant coffee, sugar and boiling water. By whipping, I really mean get whipping. Some say you have to do it 400 times. Perfect excuse for exercise, eh? Well, I was actually a bit more lazy and use my kitchen aid mixer.
While Dalgona Coffee is popular, one must ask, how about those non-coffee drinkers? No sweat, I found couple good Dalgona Matcha Latte recipes and tested it out personally. Some I failed to get it whipped to the shape I need and some lack matcha taste. We eventually found a good recipe and modified it a bit. It DOES required egg-white. However, we heat it up with hot sugar water (similar to a Italian meringue). The egg white should be heating up to a safe consumable temperature. There are also some vegan version out there without the use of egg whites. However, they're not really to my liking. (I guess everyone has different taste buds).
Here is my version:
Ingredients
- 1 egg white (fresh and room-temperature egg whites whip up faster than cold ones)
- ¼ cup water (for the hot sugar syrup)
- ¼ cup sugar
- 1 tablespoon Dan & Russ' Jeju Island Ceremonial Matcha (add a bit of water and whisk it until it's completely dissolved)
- ¼ tablespoon vanilla paste
- 1 cup milk
Instructions
1) In a small saucepan, combine sugar and water. Heat over high heat. This sugar syrup should reach 240°F. I personally just heat it up until it starts bubbling.
2) Whip up egg white in a stand mixer. If you're feeling adventurous, you can also whip it by hand. It should form gentle peaks
3) With the mixer running, slowly drizzle in hot sugar syrup. This "Italian meringue" should becomes shinny and glossy
4) Prepare your Dan & Russ' Jeju Island Ceremonial Matcha, and whisk it with a matcha tea whisk. Add vanilla paste to the matcha mixture and then combine it with the Italian meringue.
5) Now it's time to serve! Serve this over a cup of milk and ice. Make sure you still leave enough room to put the matcha mixture on top. Put a straw to mix it all together and Bob's your uncle, the Dalgona Matcha Latte is ready!
